The current de facto default encryption algorithm for XMPP is OMEMO.
XMPP also supports OTR, OpenPGP, etc.

Email and encryption are incompatible; email is built using plain text protocols.
If you want real encryption, it’s required to encrypt email before it’s sent with encryption tools such as GPG.
